Anything in .308 or .30-06 and you can hunt anything in North America and a wide varaiety of ammo is available for both and can usually be found at any place that sells rifle ammo.
The Action, as Nacho states above is totally a personal preference and what you are comfortable shooting. I have 4 levers, 5 bolts, and a pump rifle and it just depends what, where, how, when and why as to which one I take to the field with me. I personally have two .308's both carbines (one pump and one lever) that shoot accurately out to 200 yards and can be carried threw the "thick" stuff. I am partial to the .308 since it doesn't recoil quite as bad as a .30-06., then again I only weigh 150lbs.
30-30 is my 2 cents...
imo nothing carries or feels as good in the hand as a lever, but the 308 clobbers the 30-30 in about any catagory you choose: velocity,range, stopping power, variety of bullet wts, and accuracy. a 30-30 is a good 0 - 150,200(maybe) yard gun.
