you know, I have always heard folks tell me how crappy this wild game is or that wild game is, or hogs taste bad, or dove arent' worth it, or deer meat is for dogs. etc...
All I can say is if you take care of the meat properly, and cook it based on what it is (gamewise) I am sure you can avoid nasty tasting game.
I would bet money on the geese, that they are hunted, and thrown on the ground after they are killed and left to sit there until the end of the hunting day. resulting in crappy tasting food. If the goose was cleaned and prepped (read field dressed of some sort) and thrown on ICE, perhaps it would taste better?
Same goes with other game.

I had fresh goose once. I guy I worked with brought one in for lunch and it was great. It had a lot of dark meat and I'm not big on that but had to do with the way he cooked it. He roasted it in the oven but he added a white wine in the pan. OMG it was great.
Thank you bodysnatcher, I had a feeling most bad tasting wild-game has more to do with meat prep, and cooking than the game itself.
While you are just one, I am sure others share similar good and bad stories about wild-game taste.
One of my friends got one from someone he knew and he cooked it and he said it was awesome. He said too that it was mainly all dark meat.
+2 Here on game care for taste! Geese love those cooked over open fire but I do that with most all my game.Have had it pan fried and from the oven good also!One I find you have to be real specific with are coots now those can be a bit bad.
