Ok,
2 nights in a row I have me a new keeper to my recipe bank. This is absolutely outstanding.
I usually de-bone shoulders and use for grinding meat. No more, ever...I kept one whole last season for some reason off a nanny I shot. I was rearranging freezer and took it out last night.
This morning I tossed it in the crock~pot about 8AM. Only added 2 chopped onions, a few shake seasonings and a 1/2 cup water
8 hours later on low, I was left with this pile of tender, moist hot goodness
I picked up some whole grain tortilla bread. A bed of iceburg lettuce, a handfull of shredded venison and a scoop of dressing
Dressing:
sour cream
Chipotle mayo
chopped red onion
chopped cayenne pepper
Fresh ground pepper
homemade hot sauce
shot of lime juice
I pile all that on the tortilla shell and rolled up like a burrito. Dipped a little side dish of broth out of the crock~pot for an au-jus sauce
I just smoked my last venison shoulder, they make great chopped bar-b-cue. I even used my brisket rub on it. I am going to have to try the crockpot on one this season. That looks good.
I also used to debone the shoulders for ground or sausage until I found out you could smoke them just like pork shoulders and make pulled venison. I like that crockpot recipe though looks interesting.
