Here's a turkey I did last week. I skinned this one, and with a sharp knife, deboned the breast lobes, sliced into strips, marinated in egg/oldbay/wing sauce/milk salt n pepper, rolled in bread crumbs and fried for a nice dinner with the wife




I took the rest of the bird, put it in a large stock pot wit celery and onions, salt n pepper, and covered in water. Let simmer for 2 hours I had enough meat to make a huge pot of turkey and yellow rice, plus a ziploc bag of pulled meat for the freezer

I strained everything thru a collendar and froze all the broth in tupperware containers. ended up with about 2 gallons. this is better than any chicken stock you can buy at the store

Also ended up with both sets of wing bones to make two more wingbone calls

cooking them won't make the wing bones too soft?

Yes it will.
*EDIT*
I cut the wing bones out before I boiled the turkey
