Well got another deer so more sausage. This was in Tiger bay Black powder then i missed one on Sunday. I got to say shooting from a ground blind out of a chair is not as easy as the stand was on Saturday.
So what the best summer sausage you made. My was the mix from bass pro Backwoods seasoning.
Also I have a new stove/oven. I use to put the oven on the lowest setting and open the door to the first catch. i leave the sausage in there for about 4-hours. these were in the large 2-3 inch size casing.
I want to try adding cheese to it this year.
How do you cook your summer sausage.
Any information about making or cooking summer sausage is appreciated. i also have to try the venison breakfast sausage from my last post this time.

Pay attention to those seasoning kits, lot of them are from China. I really don't want Chinese casings for making sausage. I've made a lot of summer sausage with my FIL while he was alive. It's not really hard,main thing is getting the cure right. There are lots of recipes online just google it. We use to grind the meat,add the seasonings and cure,stuff it,smoke it, then eat it. Pretty simple.
Make sure you get the high temp cheese. LEM sells it. Post your recipe when you do it. It's one of the things I plan to do when I shoot a deer this year.

Lem has a Jalapeno summer sausage. Sound good to me.
I also ordered some of there pepper bologna. venison bologna is so good. It so much different than what you get as commercial bologna.
My recipe book is long gone. have to start a new one i can remember some or most of a few.
