I let them go about 45 minutes at about 150-175 with no smoke to dry them out. They say with these collagen casings, that they have to be completely dry before you add any smoke or they will turn rancid. Now I got a pan of lump charcoal and apple wood chips in there and lettin her rip, around 200* now. Salivating...

Okay now I've got to go buy my own sausage stuffer and make my own sausage. It's kind of like a fad sometimes I want everything ground sometimes I want it all cubed I think now I might want a lot of sausage
