I got an itching to use the elk and buffalo that my wifes uncle gave me, so I decided to mix it up and use the rest of the slim jim casings I had. Man it's a lot of work for what looks like a little bit of product.
I used the recipe that 9dawgs posted and then added my own spices and liquid smoke to it. The flavor turned out really good. I separated the meat into 2 batches. 1 mild and 1 spicy. For the spicy, I added 4 minced serrano peppers, 3/4 bottle of Tobasco, the rest of the Habenero Hot Sauce (a few tablespoons at most) and some of my homemade vineager habenero hot sauce. It turned out perfect.
After letting the meat sit overnight, I stuffed it into casing on Sunday. I also cooked it in the oven since I didn't have time to fire the smoker up. Here's the finished product (minus a few):
My only flaw was I didn't add enough pork fat and the meat was a little dry. It didn't stop my kids from eating the mild sticks up...

Ahem... I forgot to mention that using that recipe requires payment of said "slim jim" as a fee. I will just take 3 of each...I don't want to be too greedy :clap

I bought my casings off ebay a while back. They came with a bag of seasoning and casings for $15. You can also go to Sausagemakers.com or LEMProducts.com and buy them. They come out a little cheaper...
Oh goodness... I could use those for snackin in the woods at the desk at work.. or just cuz... lol... nice!
