I took these out to cook yesterday, but my wife had another meal already planned. Plus it was too damn hot to stand over a smoker

This is the "expedited, weekday version" on how I cook these, since I don't have the time or desire to tend a fire on the smoker

I made a smoke pack (soaked hickory chips wrapped in foil with some holes poked in it, placed on the burner)
Got it going on the gas grill(yes I know), and got a good sear about 15 min each side for some good grill flavor

Pulled them off and tossed in a pre-heated Crockpot

I poured a bottle of BBQ sauce on after I snapped picture. Should be ready to chow about 6:30

Looks good, no shame in the gas grilling game, it is Monday after all, as much as I would like too, I will not run the smoker everyday of the week. My quick method, I will place in the oven on a baking pan with 2 cups of stock and cover with aluminum foil until tender (usually 1.5 hours @ 350), then place on the grill with sauce for +/- 15 for color/flavor.

Just turn the grill to low brush with olive oil and coat with Cajun seasoning stack the ribs on the side of the grill ( not over flam) . Then when they at the desired tenderness pour honey over them. Let then sit another 15 minuets on the grill and there done no need for BBQ sauce. less pot and pans to clean also give you more time to drink beer.
