I'll have to check with the boss on that one. Not gonna butcher up my hog till after Thanksgiving.
Just saw this recipe on WebMD of all places:
Apple and Maple Breakfast Sausage
1 pound ground pork
1 pound ground buffalo (I figure this could be substituted with venison)
1 large apple, peeled, cored and diced very fine
2-3 tablespoons finely minced sweet onion
2 tablespoons pure maple syrup- the good stuff
1 1/2 teaspoons thyme
1-2 teaspoons fennel seed, to taste
1/4 teaspoon cinnamon
1/4 teaspoon allspice or curry
1 teaspoon sea salt, or to taste
Mix all of the ingredients in a large bowl till blended; and form 15 balls with the mixture. Pat into patties. Fry the patties in a skillet (I used my trusty well seasoned iron skillet) on each side, until golden brown on both sides and done in the middle. Depending upon the thickness of the sausage and the heat of your pan this can take anywhere from 12 to 15 minutes.
I've never made or tasted this, but I'd think a little white and black pepper to taste would be a nice addition.
Papa, after the hide,head,guts,bones,loins,ribs and hams are gone I think youre being very optomistic about having 100 lbs of meat to grind for sausage, with a 300 lb hog. all that leaves as I see is shoulder,neck and shank, and shoulder is great for pulled pork or boston butt, but JMO and hope you get your 100 lbs.
Well, the hogs are now pushing 350-375#, and it will be at least the day after Christmas before we can butcher, which means another week of feed (150# of feed). I don't know that I'll have 100# for sausage, but I will have about 100# of processed pork, with about 16-24# of that being sausage. Gonna have the butcher split the ribs into 2 racks per side. No big roasts for pulled pork. With all the wild hog I have in the freezer, there's no need to use any of our good, corn-fed, pork for pulled pork. Besides, if my luck holds out, I'll get at least one hog from the new spot Horsefly introduced me to.
