This is the way I grew up cooking and eating pot roast. Just like momma did it.
Start off with a chuck roast. I usually leave it whole, but had to cut it up to fit.
Season with salt/pepper/ onion n garlic powder.
Coat in flour
Brown all sides and remove from pot. Deglaze pot with a bit of red wine.
Add more oil and flour and make a roux
Add water and milk to the roux to make the gravy
add 2 onions
Bring to a hard simmer to check the thickness of the gravy
Add meat chunks back in to the gravy and let simmer for about 3 hours.
Serve with mashed taters or rice, and a veggie. Having green beans out of the yard
Will be ready about 6 ish
