Alright everyone whats on the menu's this weekend., I've got the beer iced down, the Indy 500 is blaring in the background and the smoker is rolling. In honor of IL2H, I am going to do my 1st spatchcock chicken and for good measure I picked up a slab of ribs. Going simple with the chicken, just the basics, salt, pepper & garlic. Decided on some Memphis rub for the ribs. Lump charcoal and hickory is doing well. Got 3 more hours to go....
