Ok, since the season is coming up I've been thinking about the good eat's we're going to be having soon. I thought I'd share this secret recipe I make every year to feed my family on Christmas morning. Just make sure you don't tell anyone else 'cause it's a secret you know... :shifty My kids love this and it's gone pretty much in a day or two after I make it. You can use it in chili or just patty it up and eat it with eggs & pancakes. Enjoy.

Grandpa’s Old Fashion Venison Sausage

4lbs Venison
1lb Pork Fat
2 Cloves of Garlic, Minced (you can use fresh or just get the jarred stuff)
2 Tsp Black Pepper
2 Tsp Chili Powder
2 Tsp Cayenne (more or less depending on the heat you want)
2 Tsp Marjoram
2 Tsp Thyme
2 Tsp Basil
4 Tsp Salt
2 Tbsp Sage

Cut meat and fat into chunks, add seasonings, and grind with a medium cutting plate. If desired you may a add 6 Tbsp of ice water to the meat to give a soft consistency and stuff into hog casings. Otherwise store sausage in quart sized Ziploc freezer bags. Serve by making small patties and frying them up in a skillet. Great with eggs and pancakes! Or to use in chili, spaghetti, casseroles, etc.

Sounds very similar to my "breakfast sausage"

I don't measure anything, but I use:

Rubbed sage
salt
black pepper
red pepper
paprika

When I do "Italian sausage" :
Omit the sage and add fennel seed
red wine
fresh chopped parsley
shredded mozzarella cheese

The top one makes the best biscuits & gravy you ever had. Make you slap yo grandma

Haha, Yeah mine makes a mighty good gravy too :>) I don't think I'd slap my grandma over it though because she was a tough old bird. She was about 95lbs of piss and vinegar and she would slap you right back and make you say 'mam! Oh yeah, she could cook good too.
