Wild hog yes
same as store bought no its better.

Dinner for mom tonight. Glassed with honey salt on the inside from the cure perfect.

Sorry i had to eat first so thats a picture of the left overs. I debone all my hams they pack and store better. I will never waste a ham on sausage again.

I froze up a couple ham size legs a few months ago. I had intended to make them in to hams. As I was going the salt cure ordered I noticed one of the recipes said I can't use frozen meat. They said it had to be fresh or it would not absorb the cure right and risk bad bacteria. Freezing changes the cell structure.
Anyone have any input on that? I was so looking forward to homemade hams.
