Once hunting season gets here I like to cook meals in bulk, and freeze. I hate coming in from the woods way after dark and then having to cook. Much easier to have a meal pre-cooked. Just dump it in a pot and heat it up while you are mixing a crown n coke.
One of my "comfort camp meals" is no other than Brunswick stew. It is an old Georgia staple dish, sold in just about every single bbq joint in the state. If they don't have it, it may not be a good idea to even eat there. The recipe for this has never been "exact", more of whatever you got. The traditional recipe called for squirrel and rabbit. More modern is any combination of pork, beef, chicken(bbq'd or smoked)
Earlier in the summer I had smoked a whole bunch of pork(pulled pork) and vacuum sealed it for later use.
I don't really measure anything, just eye ball it. Here is the basics for what I made.
10lbs approx pulled pork
2 large Vidalia onions chopped
4 garlic cloves chopped
5 big cans diced tomatoes
5 potatoes diced
2 bags frozen lima beans
2 bags frozen corn
2 bags frozen okra
2 cans beef broth
bbq sauce
ketchup
yellow mustard
sea salt
black pepper
2 jalapeno's diced
chunk it all in a HUGE pot and simmer for 4 hours
Anyway, I have 9 containers to freeze. I ate at least 2 containers worth last nite. I actually have guys request I make and bring this to camp

Nice,that brought back memories there. My grandad used to always make Brunswick stew for every trip and we would end up eating the same dinner every night for how ever long we were there. Towards the end of a week I couldnt hardley stomach it but I would kill for some right now.
