breakfast casserole

Super easy to make
I made this last night and had plans to vacuum seal it and take it on my next trip. Too late, we done dug into it.

Brown 1.5 pounds of wild pork sausage(crumbled)
Drain and place in bottom of a disposable aluminum baking pan or casserole dish

Sprinkle a whole pack of shredded cheddar cheese over top of sausage.

Beat a dozen eggs and pour over entire pan

(you can add whatever or substitute whatever. I added some parmesan and swiss also. also added a jalapeno diced and some diced onion. Mushrooms would be good too)

bake in oven at 350 for about 30 minutes. You can stick a toothpick in middle, if it comes out clean its done.

Take out of oven and you can slice it into squares like you do brownies.

I just ate about half of the tray just now :nuke :nuke :nuke

We add crossont dough in the bottom and hash browns. good stuff. :rockon

do you cover it in the oven? Oh and bodysnatcher do you brown the hashbrowns first or just put them in ?

We use the bag of frozen and just put them in. And if I remember right we cover ours for part of the cooking time.
