Way worth doing i cure my own make sausage hams do all my own processing. Yes you can make ham from wild hogs tho i have not yet perfected bacon.

boy oh boy does that look good!! I can bring the eggs, brown free roamin', and be there at 8am. Kidding aside, it looks delicious.

I just did two. The first half anyway. The hams off the hog from last week end. I do the wet cure then pack'em up until I need one. I will defrost 3 day before I need one so it has 2-3 days to age and air dry. Then the go on the smoker.

Cant say I have any thing good to say about vacuum packed. Except it make packing your clothing easy for the trip out and tight for the trip back.
