Get a sausage stuffer it worth it. I gust bought one this year.
What did you use to mix in the seasoning.
I used a hand mixer in one of my deep fryer tubs work great.
i measured out how much seasoning i need and put it in a bin, then poured a cup of water so make it slushy then poured the ground meat in and mixed it with my hand.. than put it all back into the grinder and pushed it into the casings through the grinder..
Why i need s sausage stuffer when i can just use the grinder to pack it?
Makes it faster and easier. I use to do the way you did. It Will also do slim Jim size casing with out any problem. I like hot sticks by lem. Always had problems with stuffing small casing with feeding it thru the grinder.
Last time I did some, we made 15 lbs sweet Italian 5 lb franks 20 lbs breakfast. Two hours with a little help from my wife. Done and cleaned. She did have to run out and get me one lb of ground pork for the last batch I was just a lb short.
By the way I don't use the fat from hogs I cut it out and use beef fat I prefer the taste.
I had one, and the last time I saw it was airborne as I threw it out in the creek in the back yard.
I do it all in one step: Chunk the meat up(1/2 frozen) in cubes,add seasoning, hand mix in a cooler..Then grind and feed into the casings all at same time
