Summer Sausage weekend

Well it is going to be a summer sausage weekend... I'm planning to make 50 lbs. of summer sausage. I ordered the cheese Monday and will start thawing out the meat Thursday. The plans are to include an Iraq war buddy that I carry hunting and have him help me. I always mess with him and it has been fun so far. Telling him we gonna pack some meat and I'll be smoking my sausage. (You can think of other things to say) It is going to be a huge making, never done 50 lbs at one time so we'll see and I plan to post lots of pictures. Stay tune!

Bossman,
I've been puttin' off making some more summer sausage for a couple of months. We made a 25 pound batch of summer sausage and a whole big batch of bulk sausage back in March. I believe you have just re-lit my fire, but I'm only goin' to do 25 pounds at the time.
Lookin' forward to following your sausage makin' escapades!
I'll also post some pictures when we get started.

I still have about 50# or so of meat from last season to grind. Been putting it off. I'll probably do it next weekend since the wife will be out of town

OK I haven't even got the meat thawed out yet and I gots questions. I know on all these sausage in a box recipes they all tell you not to mix it in a metal bowl. yeah yeah I understand chemicals and metals mixing, but what about using a porcelain bowl? I've got a big enough porcelain bowl but the plastic bowls I have hold cereal. I will say all of the sausage a made last year turned out great out of the ole porcelain bowl. But the stuffer is stainless steel, what the heck metal or plastic... Is what it is!

I have 2- 28 quart plastic tubs that I use for meat processing. Plenty big to get your hands in there and mix it good.
