I don't want to give money to someone that does a worse job than me. seen some crappy "butchers" using sawsalls for everything with bone dust and hair in every cut and wrapped poorly. my old guy used a knife for just about everything and was an artist. did cuts I could never do. I usualy went with roasts, cutlets, chop meat, then some special stuff like jerky/pepperoni,brats,hot dogs, breakfast sausage. but that was for deer. hog I thought was easier to butcher into simple type cuts yourself. the care and wrapping is as important as the cutting imo.

My buddy took about 5 deer there the last two seaons and just loves the place. That guy in Mayo screwed me a few times, last time it was a nice 175 lb sow, thing just come up missing. If I don't do them myself I have a buddy that does it for me. I am going to by a cuber soon then I think I will have no need for a butcher anymore. H60 I feel your pain,I have 3.If I'm extremely busy they go to my buddys,a few years ago me and my brother came back with 7 deer from Ga,they went to the butcher.
