Freezer burn is the enemy over time, but if it's not over a couple years it will make good sausage. We always have several 2 gallon bags of trim that are 2-3 years old added to fresh meat when we make sausage each year. Same goes with the chops and fry meat that may get hidden under something, they are added to the sausage meat. I found several Feb. 2010 bags of chops a few weeks back, they were in the zip-loc vaccum bags and they were fine, I was surprised! Treefarmer

I guess it depends on your definition of "bad." If it's freezer burnt, it's not going to taste good but will still be perfectly safe to eat.
