Green Swamp 156# sow

Yeah, had some years ago at a friend's birthday party. Had to look up the name, just remembered it was liver and heart. Not my favorite Puerto Rican dish, but they ate it up! Pernil is awesome! Those crispy little fat pieces, all the garlic, etc.

Here are some pics of the 2 sows from Thursday. 105 and 65 pounds.
