Rare 130-135
Medium-rare 135-140
Medium 140-145
Medium-well 150-155
Well done 155-160
I use a cheap digital probe thermometer from wal mart. Remember when you take meat of the grill it will rise another 5 deg or so I would always take it to about 135 or so and wrap in foil. Then place the foil wrapped ham in a cooler with a couple towels on top for about an hour. That is when it gets real tender
