yea those shells off the seawall .. open them up and throw the meat on a small freelined hoook and the sheepshead are gonna eat!
I agree there is a time and a place for each bait and when it comes to sheeps they give up a good time no matter what!
I like to leave the skin on the fillet, then mix up some Dale's Sauce with some Miracle Whip and spread it all over the meat side, sprinkle on some fresh black pepper, and grill over medium heat until the edges curl a bit and the meat is flaky. MMMMMMM-MMM! Triggerfish are good this way, too!

either the full or new moon in March every year I religiously make a run to the Buckeye reef. We catch the big breeders out there. Some of them go over 5# easily.
One thing I like to do with them is this:
Cut the bones out of the filet and cut into nugget size pieces
get a pot of boiling water and add Zatarians crab boil
add pieces of sheephead into boiling water for about 3 minutes.
remove fish and dip in melted butter
Also known as poor mans lobster. It tastes very similar
