I went ahead and got me a Gerber Obsidian:

Having a good sized blade as well as the little screwdrivers and can opener was the deciding factor. I'll probably end up getting another folder with a larger blade and the assisted opening to carry in certain situations, but for an EDC this Obsidian looks like it will do nicely.

This are by far is my 2 favorite knives. I have owned case, kabar etc etc... Gerber knives are great in my opinion. I never go anywhere without my pocket carry knife.

nice collection, I've got a lot of schrade/oldtimer/uncle henry's but never one with a gut hook, how is it to sharpen the gut hook part? I'm ocd about keepin em sharp also. I have a gerber gut hook with replaceable single edge razor blades, but use the gerber trout and bird 95+ % of the time. the old timers are so easy to sharpen but the stainless gerber holds an edge longer and don't have to worry about rust or pitting.
