Beets?

Any idea when these things are ready? I guess the easy answer would be to go pull one up and see. Waiting on this and cabbage to do something, and that will be about it for the winter garden. Already getting spring stuff in the ground.
The beet tops were very small till a couple weeks ago, then they just took off

well with the NY beets, the greens would be taller app 1'. your variety may differ. imo when the greens look like they have matured fully pull 1 out and see. better to take 1 out too early than leave all in the ground too long. one of my fav garden foods and can eat them raw. try them with a horseradish sauce.

The bulb isn't really deep on them, you should be able to scrap the dirt away a little bit and get an estimate on size, sorta like radishes

I pulled a 2 of them up today and the beet root is about the size of your thumb. Not sure if I am going to wait this project out or not as I got other stuff to plant. The tops are nice and pretty. I will give it 2 more weeks

if this warm weather holds they could grow quite a bit in 2 weeks. it'd be a shame not to get the bulbs. if a frost is due, a low tent and/or some straw/hay cover will keep them fine.
