What kind of rabbits are ya using if you dont mind me asking?

San Juans are a good choice. My buddy has a big rabbit pen he just built for our crew to train ours in and that's what are in his pen. At most rabbit pens I've been to the pups are introduced to the white cottontails and learn to chase it by sight for a few times and then when they advance put them on the San Juans. Once the San Juans stamina are built up they will give the puppies a run for their money unlike the other rabbits.

Look on craigslist under the farm and garden section and you can normally find some frequently. I don't see any on there today and the San Juans normally go quickly as pen owners buy them 5-6 at a time..

Once they are in the pen and comfortable with the area, start getting in the pen and running them around yourself or have some kids do it to build up the rabbits endurance. If you do this everyday for a few weeks after the rabbits are mature, most pups won't be able to catch them easily. Also you might want to put some "safe" places for the rabbits to go once they are tired of running like a piece of PVC pipe capped at one end. Just watch out for venomous snakes to be attracted to your rabbit pen and laying in the PVC pipe :pinch
