how do you remove the hams without freeing the poop chute and getting the genitals and intestines out of the way and cutting the pelvic arch, plus you loose the tenderloin. no biggie on a pygmie hog, but that is the best meat. I can see doing the shoulder and backstrap, but you still gotta skin it right?and to me thats the hard part

Separate it at the joint, very easy once you've done it a time or two.
Just like fileting a fish.Just cut around the ball joint and hip area. Saves a lot of clean up and mess. I don't usually save ribs and the sweet breads are over rated. I do cut them out of deer though.Even if I gut them in the woods I still usually bone them on the skinning rack.
