Well this year will be my first year going after something that is bigger than a rabbit. I saw those butt out things in the store and was wondering if anybody used them or was it just easier to cut it out. Also when it comes to the testicles how do you get those things off (i couldnt quite figure out how else to word that)?

Someone gave me one of those things years back, and its still in the package. A good sharp knife, ream around the butt hole, and all that mess pulls right out

I recommend watching some youtube videos. There are hundreds of them on skinning and butchering

Some folks swear by the butt-outs, some just knife it. I was recently in PA and when time came to field dress a doe I was waiting for someone to brandish the butt out, but the guy with me said, "Nah, I don't use those" and we did it with the knife. One less gadget to carry in I guess.

they never had butt outs when I started, I suppose they would work but are not required. one thing I might add, carry some thin cord to tie the anal opening closed once freed, also tie the penis off if a buck, so they can't leak pee/poop during cleaning. and if you don't puncture the bladder/intestine during cleaning it all stays intact and you could get your own doe urine fresh from the source, better yet if she happens to be in estrous.
