I got this idea off of one of the chile pepper sites I read. This is sort of a trial batch for when my peppers really start producing, and I am going to make a big batch of it and pressure can it

I'll call it a Mango/peach/jalapeño sauce
3 peaches
1 mango
1/4 red onion
2 cloves garlic
2 lemons (juiced)
handful of jalapeños
Pinch sea salt
splash of red wine vinegar and regular vinegar. Chunk it all in blender and let it rip
This is a really nice balance of flavors, and a good amount of heat too. Can't wait to make this with my habanero's and datil's
I guess you could use this as a salad dressing, dipping sauce, or a sauce to pour on meat
If you were to leave it in chunks and perhaps throw in a few cut up tomatoes, that looks like it would make a kick a** tropical salsa. I could throw it on some whole fish and then bake in the oven.
I usually make a big container of ceviche for 4th of July weekend. It would go good as a topping
Pour it over one of them piglets you got there!!! Toss one in the smoker and call me when it's done!!! :bbq
