Awesome stuff! What wood did you use for smoke?
I was using lump charcoal and oak logs. I throw one good stick of oak in every hour for the first 3 hours.
I actually ran out of the oak I got from nacho so the son and I went out this morning and trimmed the oak thats hanging over my neighbors garage. I have been meaning to do it for awhile just needed a good enough reason I guess. I imagine my neighbors think I am a little crazy, I was triming everything we cut down into +/- 8" pieces......
I got a little pork ham and shoulder soaking in a brine
(salt/pepper/onion n garlic powder/ Old Bay/bay leaves/brown sugar/fresh squeezed grapefruits/water/ice).
Last 2 pieces of pork in my freezer. I am gonna do an overnight smoke on the BGE Saturday night. Figure I will get it fired up about dark tomorrow and get it stabilized at about 250ish. I'll do a dry rub of Bad Byron's Butt Rub, put the meat on right when I go to bed about 10 and check it around 5:30 when I wake up usually
Hell I may have pulled pork and eggs for breakfast Sunday morning
Damn that looks good Allen! A bunch of buddies and I get together for the game and go all out. We've got 2 venison hams, a full backstrap, 5 chickens and a mess a ribs going for the game. Oh, and a keg! Time for me to get up and tap it. :toast
I've got a brisket in the smoker as we speak. Should be ready just about game time!
