Big green egg meatloaf

If there is one meal I am particular about, it's meatlaof. I simply can't stand a mediocre overcooked/under seasoned meat loaf. I don't care for the traditional [lipton onion soup mix] deal.
This is equal parts ground venison/pork, Italian bread crumbs, diced onion,eggs, and my own concoction of seasoning.
On the egg in my favorite cast iron pan, with some taters and gravy to follow

Here is another one I did tonight. SImple beef/pork mix. Added some diced onion,garlic, salt/pepper, garlic and onion powder,egg, and Italian bread crumbs. When I got it formed, I put a good coat of Byron's butt rub on top.

In the egg at 300, with some tangerine wood, for about an hour. Checked it and it was 140 in the center. Pulled it and wrapped in foil for 10 minutes.

With some spicy ketchup I threw together.

Sorry, no mashed taters for a while. Doing my lo-carb kick again. Had a bowl of collard greens on the side from the garden from last winter
