We just caught another person trespassing with dogs on our property, via trail camera. What are our options for prosecution? Where do we start? Do we notify the Sheriff?

yes and have them issued trespass warrants!

What is a trespass warrant?

Is it a bad idea to post a picture of the guy at our gate with a message? We were going to post something similar at the feed store as well.

If they carry a gun then it's considered armed tresspassing. A more serious charge then just being on property.
