Great Week End In ST Augustine.
Saturday started with Pig Busting. 135 lb. bore. Yep Took 3 shots.. Looked behind me and at about 75 yards this calico raccoon, in the morning sun, was walking at 12 o'clock.
First shot dropped it in the shoulder; The pig squealed kicked( I reloaded) then laid motionless. Let my guard down, and it jumps up running, quartering toward but away on my right at 3 o'clock. Second shoot in a rush - hit the gut, pig turns running right at me. Reloading Pig Now 20 Yards at about 8 0clock it pauses. 3ed shot in the head game over. Really not much meat lose.
Then came the best part playing turista. The old jail and then GHOST BUSTING. The wife did get a photo that looks like a face appearing out of nothing, buit ?????????????/ see her post. The wife was into it. She made it fun. Love her
Oh the water was over 5 feet high in some of the areas, orange x on houses all along the beach?. Yes my spot after 10 years still produced a hog at first light. yes, I only hunter 2 hours.
Good to see someone out there is making it happen. I am still 0 for nothing this season but getting ready to get after it.
Well done my family and I love st Augustine.
Hope to have some luck next week.
My meat yield was 30 percent. If I head shoot them I sure it will go up to. The meat is great just like a pen raised and this bore was so nasty smelling like nut juice. You never know unless you sample.
Just made some good wild pork.
3 onions
1 red
1 sweet
1 yellow
Slice all three place in pan with 1/4 stick butter.
Cook till they just turn tender,
( back strap) 6 slices about 3/4 inch thick.
Coated with brown sugar and Greek seasoning. 1/8 cup or less of each sugar and seasoning.
Move the onions to the edge of pan and place pork in middle,
cover the pan- this will create a sauce from the moisture in the onions meat and butter.
I flipped the meat once then I leave it uncovered to finish cooking. The sauce my cover the meat while cook- boiling. it was tasty and not dry at all great with the sweet taste of the onions. It got the Latin chef (My wife) seal of approval.
This was served with boiled red potatoes.
JT were you at next week end.
