After buying this gun, and putting a couple hundred rounds thru it...I was noticing a lot of slide wear on the blueing on the barrel and breech.

I found some instructions on how to do this. I think it looks pretty good.
Total labor time, about 20 minutes. Total soak time, about 3 hours total
Before:

barrel, after soak, stripping and polishing

Finished product

Plug ends and spray down with brake cleaner to remove all oil. Soak in white vinegar for 30 minutes. Wipe with steel wool vigorously to remove first layer of blueing. Soak again for like an hour(I let it go for like 3 hours but only because I had to leave for a while). Wipe again with steel wool and spray with brake cleaner.
They say to use flitz or nevr dull but I didn't have either. I used Turtle wax and the buffing pad on my dremel. Did a couple coats of that then buffed it with a clean pad till shiny. Then oiled everything and put it back together. I did the spring pin and take down pin also but it isn't in the pic

Won't it rust easier without any finish on the metal?

I will keep an eye on it. If it does I will rebuff it and blue it. No biggie. Most people don't know but blueing is a controlled form of rusting
