interesting perspective. sounds like it makes perfectly good sense. i think sometimes people get too caught up in convenience and dont fully appreciate taking the processing the extra mile. we have been shopping around for an electric grinder the past month or so and you may have just sold me on it anyways. i do like the processor i use, however there are times i have felt i did not get as much back as i should have. i guess if you have never watched them do it then you may never know what goes on. im sure lots of operations do it different but from their standpoint it makes sense to do it that way. i would like to think the guy i use doesn't do that, but i wouldn't be surprised. good post man, thanks for that point of view.

Growing up , my dad did all his own. If i could i would . I had a real bad experience with a guy in sorrento this last fall. Thats why im looking for a new guy. having a good butcher is like having a good accountant. I found a guy this week near by and he invited me to his place to check out his operation before i bring in any game. He takes his work seriously and has been doing it a long time.i think it is a convinience thing. If i had the room and equipment i definetly would do my own work.

i also butcher my own. I mean if there was a cheap butcher that i knew close to a place where i killed an animal and i had the money and no time i might consider it but what are the odds that that all would happen.. lol
