Nice Ted! Way to go!
And I second the backstraps!. Possibly that other ham as well.
Just a couple of thoughts and comments on road kill.
Back when I was gainfully employed, four schools, the district office and our maintenance shop were in Chipley, we also had three schools in the town of Vernon. My crews picked up several deer over the years that were fresh road kills on that 17 mile stretch between those two towns. I would get a call, "Hey boss, there's a fresh one down, do you want us to bring it back to the shop?" Depending on that days schedule sometimes we did and some times we didn't. There are some interesting tales concerning visitors to my office and shop by school administrators wanting to check something in the shop or progress on a project while we had one hanging in the back room. If those folks that were invited to some of our regular deer cookin's on Fridays, only knew they were eating road kill! I guess the statute of limitations has run out on me as I retired in 2009.
All this to say that road kill some times is very salvageable and some times it might be quite unpleasant when the gut has been busted, kinda' like a gut shot deer. That's when a water hose, a strong stomach and liberal trimming come together. We can testify to the fact that road kill is edible!

I have processed many, from a buck that even harpooned a girl in the drivers seat. She survived She also sent a message she wanted a revenge steak salvaged about 90 percent of the meat. I was happy to supply her with one. Generally there not much meat lost from road kill. Sheriffs and other law officers use to ask if I could process a few. Some went to various food charity some were for me.
Truth if this side the only damage 2 shoulders back straps one ham and neck. Don't know until I had it hanging if any more or less.
glad to see everyone is harvesting !!! thats what this forum is all about!!
