I come to determine big boars make the best cured pork while younger hogs make good plain pork. Its great (cured pork) fried up with bacon for breakfast. I cured every part of the pig my recommendations grind the neck meat shanks and scraps after you process it keep that for susage. Smaller chunk seam to pick up more flavor. For instance a 4 lb ham no shank, bone in cured the sawn into steaks will only taste like a regular ham steak at say a waffle house or cracker barrel county ham. The smaller say 1 lb chunks are just tastier. I slice them like bacon and fry them. I gather the infuse more with the salt and sugar.<br><br>The recipe is simple <br>pork <br>large Tupperware with lid, Big enough for a whole ham off a 150lb pig. <br>1 cup sea salt<br>1 cup brown sugar<br>2 soup spoons of pink salt. curing salt.<br><br>1 gallon or so of water.<br><br>Dissolve the salt &amp; sugar in the gallon of water in your Tupperware. Place the pork in. If needed add water till covered. Place a bowl over the meat so when you put the lid on the meat is held under the water. Place in the beer fridge for 2 weeks. The salt keeps it from going bad. <br><br>Cooking a whole ham rub with honey and brown sugar and wrap in foil and grill. You could improve by smoking them.]]></content:encoded>

                        <content:encoded><![CDATA[Made 25 pounds of bulk venison sausage this morning.  It is a 60% venison 40% pork mixture, using Legg's Old Plantation pork sausage seasoning with added sage and cayenne pepper.  We ran out of sausage last week and have been using it in our stuffed Bell peppers, so it was time.  25 pounds is not a lot but it is as much as we can handle easily at our age, no need to kill yourself making a big batch and interfering with nap time.<br>It tasted good, we had some for dinner along with peas and rice, fried corn bread and a big glass of iced tea!  <br>Since I started making our sausage at home, I've kept records and try to keep the seasoning very consistent with what we want it to taste like each time.  All ingredients are measured accurately each batch, keeps the final products the same each time.<br>Miss Joy took a couple of pictures after we were almost done with this batch.<br>Treefarmer

People don't even have a clue of what kind of time much less money that goes into making venison summer sausage.  I make a couple of batches each year and always have people ask out of the blue... how much do I sell them for.  For one if charged people for them, they couldn't afford it.  It's like some city folk wanting to get a wild hog processed, they want sausage, ribs, and bacon...ain't happening! Anyway I made 90 lbs. of summer sausage this time.  I use a mixture of 2/3 venison 1/3 pork.  This go around I made garlic and pepper mainly.  The last time I added cheddar cheese but time it was a split moment cooking and I didn't have the time to order the cheese.  If I make anymore before next season I'll order some cheese. I ordered the cheese Monday and will start thawing out the meat Thursday.  The plans are to include an Iraq war buddy that I carry hunting and have him help me.  I always mess with him and it has been fun so far. Telling him we gonna pack some meat and I'll be smoking my sausage. (You can think of other things to say) It is going to be a huge making, never done 50 lbs at one time so we'll see and I plan to post lots of pictures.
